The base for all our infusions. Sourced from the ancient island of Crete which is renowned for the balanced aromatic flavor and health benefits of its oil. Greek olive oils are also protected by strict labeling and production laws which means they are never filtered or blended with other oils or fillers. Harvested and pressed in the hills of Kolymvari where the trees are farmed by individual owners in the village who bring their olives straight from the fields for juicing. Made from the koroneiki olive which has particularly high levels of polyphenols noticeable by the little bitter bite at the end.

This is the strongest formula we make, with three times the amount of CBD for an assertive if not aggressive herby taste. The strong flavor is best suited for slow-roasting at low temperatures to temper the taste of the plant with whatever else you are roasting (tomato/shallot/onion confit are good ideas). If you are short on time and interested in something more immediate, try it over toasted bread rubbed with garlic as the side to a simple bowl of soup. The grassy notes elevate deeper flavors.

CBD Infused Chili Oil

In food, as in life, too much harmony breeds boredom. To avoid a pileup of blandness, some counterpoint is needed: something to punctuate the dish to give it shape, like chili oil. Ours is enhanced with CBD and three varieties of chilies which are blended to create an oil with medium-level heat and a bit of smokiness. Nice mixed into tahini, over sautéed vegetables, to finish a soup, over burrata, rice, eggs, beans, or raw oysters. Really, it's good on anything you want to festoon with a subtle fiery spice.
